Baked Chicken with Potatoes (Pule e Furrë me Patate)

Ingredients
- 4 chicken thighs
- 4 large potatoes, peeled and sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix the chicken thighs, potatoes, onion, garlic, paprika, thyme, salt, pepper, and olive oil until well combined.
- Transfer the mixture to a baking dish and pour the chicken broth over the top.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is golden and the potatoes are tender.
- Serve the baked chicken with potatoes hot and enjoy!
