Ingredients

  • 4 chicken thighs
  • 4 large potatoes, peeled and sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the chicken thighs, potatoes, onion, garlic, paprika, thyme, salt, pepper, and olive oil until well combined.
  3. Transfer the mixture to a baking dish and pour the chicken broth over the top.
  4. Cover the dish with foil and bake for 45 minutes.
  5. Remove the foil and bake for an additional 15 minutes, or until the chicken is golden and the potatoes are tender.
