Ingredients
- 500g cod fillets
- 500g potatoes, thinly sliced
- 200g bacon, diced
- 1 onion, thinly sliced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Layer the sliced potatoes in a baking dish, seasoning each layer with salt and pepper.
- Place the cod fillets on top of the potatoes.
- In a skillet, cook the diced bacon until crispy. Add the sliced onion and cook until softened.
- Spread the bacon and onion mixture over the cod fillets.
- Dot the top with butter.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cod is cooked through and the potatoes are tender.
