Ingredients

  • 500g cod fillets
  • 500g potatoes, thinly sliced
  • 200g bacon, diced
  • 1 onion, thinly sliced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Layer the sliced potatoes in a baking dish, seasoning each layer with salt and pepper.
  3. Place the cod fillets on top of the potatoes.
  4. In a skillet, cook the diced bacon until crispy. Add the sliced onion and cook until softened.
  5. Spread the bacon and onion mixture over the cod fillets.
  6. Dot the top with butter.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cod is cooked through and the potatoes are tender.
