Baked Eggplant with Tomato Sauce (Kızartma)

Ingredients

  • 2 large eggplants
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups tomato puree
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants into 1/2-inch thick slices and place them on a baking sheet. Brush both sides of the eggplant slices with olive oil and season with salt and pepper. Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and tender.
  3. Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
  4. Stir in the tomato puree, paprika, salt, and pepper. Simmer the sauce for 10 minutes, stirring occasionally.
  5. Once the eggplant slices are done baking, remove them from the oven and top each slice with a generous spoonful of the tomato sauce.
  6. Return the baking sheet to the oven and bake for an additional 10 minutes to allow the flavors to meld.
  7. Serve the kızartma hot, garnished with fresh herbs if desired.
