Baked Lamb and Rice Casserole (Tahchin-e Gosht)

Ingredients

  • 2 cups basmati rice
  • 1 pound lamb, cut into small pieces
  • 1 onion, finely chopped
  • 1 teaspoon turmeric
  • 1 teaspoon ground saffron
  • 1/2 cup plain yogurt
  • 4 eggs
  • Salt and pepper to taste
  • Vegetable oil

Instructions

  1. Wash the rice and soak it in salted water for 2 hours.
  2. In a bowl, mix the yogurt, eggs, turmeric, saffron, salt, and pepper.
  3. In a large pot, boil the rice until it's parboiled, then drain and rinse with cold water.
  4. In a separate pan, sauté the chopped onion and lamb pieces in vegetable oil until browned.
  5. Grease a baking dish and layer the bottom with a thin layer of rice.
  6. Spread a layer of the yogurt and egg mixture over the rice, then add a layer of the lamb and onion mixture.
  7. Continue layering the rice, yogurt mixture, and lamb mixture until all ingredients are used, finishing with a layer of rice on top.
  8. Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes until the top is golden and crispy.
  10. Allow the tahchin to cool for a few minutes before slicing and serving.
