Baked Lamb and Rice Casserole (Tahchin-e Gosht)
Tahchin-e Gosht is a delicious baked lamb and rice casserole dish that originates from Caspian cuisine. This flavorful and aromatic dish is perfect for special occasions or family gatherings.
Ingredients
- 2 cups basmati rice
- 1 pound lamb, cut into small pieces
- 1 onion, finely chopped
- 1 teaspoon turmeric
- 1 teaspoon ground saffron
- 1/2 cup plain yogurt
- 4 eggs
- Salt and pepper to taste
- Vegetable oil
Instructions
- Wash the rice and soak it in salted water for 2 hours.
- In a bowl, mix the yogurt, eggs, turmeric, saffron, salt, and pepper.
- In a large pot, boil the rice until it's parboiled, then drain and rinse with cold water.
- In a separate pan, sauté the chopped onion and lamb pieces in vegetable oil until browned.
- Grease a baking dish and layer the bottom with a thin layer of rice.
- Spread a layer of the yogurt and egg mixture over the rice, then add a layer of the lamb and onion mixture.
- Continue layering the rice, yogurt mixture, and lamb mixture until all ingredients are used, finishing with a layer of rice on top.
- Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 45 minutes.
- Remove the foil and bake for an additional 15 minutes until the top is golden and crispy.
- Allow the tahchin to cool for a few minutes before slicing and serving.
