Baked Lamb with Tomato and Onion Sauce (Djaj Bil-Tomato)
Djaj Bil-Tomato is a classic Libyan dish featuring tender baked lamb smothered in a rich tomato and onion sauce. This comforting and flavorful dish is perfect for a special family dinner or a gathering with friends.
Ingredients
- 1 kg lamb, cut into pieces
- 2 onions, thinly sliced
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup water
Instructions
- Preheat the oven to 180°C (350°F).
- In a large baking dish, arrange the lamb pieces in a single layer.
- Sprinkle the sliced onions, diced tomatoes, and minced garlic over the lamb.
- In a small bowl, mix the ground cumin, paprika, ground coriander, cinnamon, salt, and pepper. Sprinkle this spice mixture over the lamb and vegetables.
- Drizzle the olive oil over the top and pour the water into the baking dish.
- Cover the dish with foil and bake in the preheated oven for 1.5 hours.
- Remove the foil and bake for an additional 30 minutes, or until the lamb is tender and the sauce has thickened.
- Serve the Djaj Bil-Tomato hot with rice or bread.
