Baked Lamb with Tomato and Onion Sauce (Djaj Bil-Tomato)

Ingredients

  • 1 kg lamb, cut into pieces
  • 2 onions, thinly sliced
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup water

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large baking dish, arrange the lamb pieces in a single layer.
  3. Sprinkle the sliced onions, diced tomatoes, and minced garlic over the lamb.
  4. In a small bowl, mix the ground cumin, paprika, ground coriander, cinnamon, salt, and pepper. Sprinkle this spice mixture over the lamb and vegetables.
  5. Drizzle the olive oil over the top and pour the water into the baking dish.
  6. Cover the dish with foil and bake in the preheated oven for 1.5 hours.
  7. Remove the foil and bake for an additional 30 minutes, or until the lamb is tender and the sauce has thickened.
  8. Serve the Djaj Bil-Tomato hot with rice or bread.
