Baked Plantain Chips With Avocado Salsa

Ingredients

  • 2 ripe plantains
  • 1 tablespoon olive oil
  • Salt to taste
  • 2 ripe avocados, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel the plantains and slice them into thin rounds.
  3. In a bowl, toss the plantain slices with olive oil and salt.
  4. Arrange the plantain slices in a single layer on a baking sheet and bake for 15 minutes, flipping halfway through, until golden and crispy.
