Ingredients

  • 2 cups long-grain rice

  • 1 can (14 oz) diced tomatoes
  • 2 1/2 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, combine the rice, onion, garlic, bell pepper, zucchini, peas, diced tomatoes, vegetable broth, oregano, thyme, paprika, salt, and pepper. Mix well.
  3. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  4. Remove the foil, sprinkle the grated Parmesan cheese over the top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  5. Let the casserole cool for a few minutes before serving.
