Ingredients
- 2 cups long-grain rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen peas
- 1 can (14 oz) diced tomatoes
- 2 1/2 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the rice, onion, garlic, bell pepper, zucchini, peas, diced tomatoes, vegetable broth, oregano, thyme, paprika, salt, and pepper. Mix well.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
- Remove the foil, sprinkle the grated Parmesan cheese over the top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving.
