Baked Rice (ross Fil-forn)
Baked Rice (Ross fil-Forn) is a classic Maltese dish that is simple to make and bursting with flavor. This comforting and hearty meal is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups long-grain rice
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 cup frozen peas
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large baking dish, combine the rice, vegetable broth, onion, garlic, oregano, thyme, peas, and half of the Parmesan cheese. Season with salt and pepper, and drizzle with olive oil. Stir to combine.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle the remaining Parmesan cheese over the top, and bake for an additional 15 minutes, or until the rice is tender and the top is golden brown.
- Let the baked rice rest for a few minutes before serving.
