Ingredients

  • 1 1/2 cups long-grain rice
  • 1 lb (450g) ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper
  • 2 1/2 cups beef or vegetable broth
  • 1/2 cup tomato sauce
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup toasted pine nuts (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground meat over medium heat. Add the onion and garlic, and cook until softened.
  3. Stir in the rice, cinnamon, cumin, allspice, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  4. Pour in the broth and tomato sauce. Season with salt and pepper. Bring to a simmer and cook for 5 minutes.
  5. Transfer the mixture to a baking dish and cover with foil. Bake for 45 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the rice is tender and the liquid is absorbed.
  7. Sprinkle with chopped parsley and toasted pine nuts before serving.
