Baked Rice with Meat, known as Ross il-Forn in Maltese cuisine, is a delicious and comforting dish that is perfect for a family meal or a gathering with friends. This hearty casserole combines tender meat, flavorful rice, and aromatic spices, all baked to perfection.
Ingredients
- 1 1/2 cups long-grain rice
- 1 lb (450g) ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1/2 teaspoon ground allspice
- 1/4 teaspoon cayenne pepper
- 2 1/2 cups beef or vegetable broth
- 1/2 cup tomato sauce
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup toasted pine nuts (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the ground meat over medium heat. Add the onion and garlic, and cook until softened.
- Stir in the rice, cinnamon, cumin, allspice, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
- Pour in the broth and tomato sauce. Season with salt and pepper. Bring to a simmer and cook for 5 minutes.
- Transfer the mixture to a baking dish and cover with foil. Bake for 45 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the rice is tender and the liquid is absorbed.
- Sprinkle with chopped parsley and toasted pine nuts before serving.
