Baked Wheat Dumplings With Roasted Eggplant (litti Chokha)

Ingredients

  • 2 cups whole wheat flour
  • 1 cup gram flour
  • 1 cup chopped roasted eggplant
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon carom seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/4 cup ghee
  • Salt to taste
  • Water as needed

Instructions

  1. In a large bowl, mix together whole wheat flour, gram flour, carom seeds, 1/4 cup ghee, and salt. Gradually add water and knead the mixture into a firm dough. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix together the roasted eggplant, onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt to make the filling.
  3. Preheat the oven to 350°F (175°C).
  4. Divide the dough into small balls and flatten them into discs. Place a spoonful of the filling in the center of each disc and seal the edges to form dumplings.
  5. Place the dumplings on a baking sheet and bake for 25-30 minutes, or until they are golden brown.
  6. Serve the baked wheat dumplings with roasted eggplant hot with a side of chokha (roasted eggplant mash) and enjoy!
