Ingredients

  • 2 cups whole wheat flour
  • 1 cup gram flour
  • 1/2 cup ghee
  • 1 large eggplant
  • 2 tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large mixing bowl, combine the whole wheat flour, gram flour, and ghee. Gradually add water and knead the mixture into a firm dough. Cover and let it rest for 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. Cut the eggplant into halves and roast them in the preheated oven for 30 minutes or until the skin is charred and the flesh is soft. Remove from the oven and let it cool.
  4. Scoop out the roasted eggplant flesh and mash it in a bowl. Add the chopped tomatoes, onions, green chilies, ginger-garlic paste, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well to make the chokha filling.
  5. Divide the dough into small lemon-sized balls. Flatten each ball and place a spoonful of the chokha filling in the center. Seal the edges and shape them into dumplings.
  6. Place the dumplings on a baking sheet and bake in the preheated oven for 20-25 minutes or until golden brown.
  7. Garnish with fresh coriander leaves and serve hot as a delicious street food snack.
