Baklawa (pistachio Baklava)

Baklawa, also known as pistachio baklava, is a delicious and sweet pastry that is popular in Syrian Jewish cuisine. This flaky dessert is made with layers of phyllo dough, filled with a sweet pistachio mixture, and then soaked in a fragrant syrup.

Ingredients

  • 1 package of phyllo dough
  • 2 cups of shelled pistachios, finely chopped
  • 1 cup of unsalted butter, melted
  • 1 cup of granulated sugar
  • 1 teaspoon of ground cinnamon
  • 1 cup of water
  • 1 cup of honey
  • 1 teaspoon of rose water (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chopped pistachios, sugar, and cinnamon.
  3. Brush a 9x13 inch baking dish with melted butter.
  4. Place a sheet of phyllo dough in the dish and brush it with butter. Repeat with 7 more sheets, brushing each with butter.
  5. Sprinkle a thin layer of the pistachio mixture over the phyllo dough.
  6. Layer 4 more sheets of phyllo dough, brushing each with butter, and sprinkle with more pistachio mixture. Repeat until all the pistachio mixture is used, finishing with a top layer of 8 sheets of phyllo dough, each brushed with butter.
  7. Using a sharp knife, cut the baklawa into diamond or square shapes.
  8. Bake in the preheated oven for 45-50 minutes, or until golden brown.
  9. While the baklawa is baking, combine the water, honey, and rose water in a saucepan and bring to a boil. Simmer for 10 minutes, then set aside to cool.
  10. When the baklawa is done, remove it from the oven and immediately pour the cooled syrup over the hot pastry. Allow it to cool completely before serving.
