Baklawa (pistachio Baklava)
Baklawa, also known as pistachio baklava, is a delicious and sweet pastry that is popular in Syrian Jewish cuisine. This flaky dessert is made with layers of phyllo dough, filled with a sweet pistachio mixture, and then soaked in a fragrant syrup.
Ingredients
- 1 package of phyllo dough
- 2 cups of shelled pistachios, finely chopped
- 1 cup of unsalted butter, melted
- 1 cup of granulated sugar
- 1 teaspoon of ground cinnamon
- 1 cup of water
- 1 cup of honey
- 1 teaspoon of rose water (optional)

- In a bowl, mix the chopped pistachios, sugar, and cinnamon.
- Brush a 9x13 inch baking dish with melted butter.
- Place a sheet of phyllo dough in the dish and brush it with butter. Repeat with 7 more sheets, brushing each with butter.
- Sprinkle a thin layer of the pistachio mixture over the phyllo dough.
- Layer 4 more sheets of phyllo dough, brushing each with butter, and sprinkle with more pistachio mixture. Repeat until all the pistachio mixture is used, finishing with a top layer of 8 sheets of phyllo dough, each brushed with butter.
- Using a sharp knife, cut the baklawa into diamond or square shapes.
- Bake in the preheated oven for 45-50 minutes, or until golden brown.
- While the baklawa is baking, combine the water, honey, and rose water in a saucepan and bring to a boil. Simmer for 10 minutes, then set aside to cool.
- When the baklawa is done, remove it from the oven and immediately pour the cooled syrup over the hot pastry. Allow it to cool completely before serving.
