Ingredients

  • 1 cup black glutinous rice
  • 4 cups water
  • 1 pandan leaf, tied in a knot
  • 1 cup coconut milk
  • 1/2 cup palm sugar, or to taste
  • 1/4 teaspoon salt

Instructions

  1. Rinse the black glutinous rice under running water until the water runs clear.
  2. In a pot, combine the rinsed rice, water, and pandan leaf. Bring to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the rice is tender and the mixture has thickened.
  3. Stir in the coconut milk, palm sugar, and salt. Cook for an additional 10-15 minutes, stirring occasionally, until the pudding reaches your desired consistency.
  4. Remove the pandan leaf and discard. Serve the black rice pudding warm or chilled.
