Balinese Chicken Salad (lawar Ayam)
Balinese Chicken Salad, also known as Lawar Ayam, is a traditional dish from the beautiful island of Bali. This vibrant and flavorful salad is made with shredded chicken, coconut, and a variety of aromatic spices and herbs.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup fresh grated coconut
- 4 kaffir lime leaves, finely sliced
- 3 shallots, finely chopped
- 2 cloves garlic, minced
- 1 lemongrass stalk, white part only, finely chopped
- 1 tsp shrimp paste
- 1 tsp galangal, grated
- 1 tsp turmeric, grated
- 2 red chilies, finely chopped
- 1 tsp palm sugar
- 1 tsp salt
- 1 tbsp vegetable oil
- 1 cup bean sprouts
- 1 cup long beans, cut into 1-inch pieces
- 1 cup snake beans, cut into 1-inch pieces
- 1 cup grated coconut, toasted
- 1 cup kaffir lime leaves, shredded
Instructions
- In a large bowl, combine the shredded chicken and fresh grated coconut.
- In a mortar and pestle, pound the kaffir lime leaves, shallots, garlic, lemongrass, shrimp paste, galangal, turmeric, red chilies, palm sugar, and salt into a smooth paste.
- Heat the vegetable oil in a pan over medium heat. Add the spice paste and cook for 3-4 minutes until fragrant.
- Add the bean sprouts, long beans, and snake beans to the pan. Cook for 5-6 minutes until the vegetables are tender.
- Add the cooked chicken and coconut mixture to the pan. Stir well to combine and cook for an additional 2-3 minutes.
- Remove the pan from the heat and transfer the salad to a serving dish.
- Garnish with toasted grated coconut and shredded kaffir lime leaves before serving.
