Ingredients

  • 4 duck legs
  • 8 shallots, finely chopped
  • 6 cloves garlic, minced
  • 4 red chilies, sliced
  • 2 teaspoons shrimp paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon galangal, grated
  • 1 teaspoon salt
  • 4 kaffir lime leaves, thinly sliced
  • 4 lemongrass stalks, white part only, thinly sliced
  • 8 banana leaves, cut into 20x20 cm squares

Instructions

  1. In a bowl, mix together the shallots, garlic, red chilies, shrimp paste, turmeric powder, galangal, salt, kaffir lime leaves, and lemongrass to create the spice paste.
  2. Rub the spice paste all over the duck legs and let them marinate for 1 hour.
  3. Place a piece of banana leaf on a flat surface and put a marinated duck leg in the center. Wrap the banana leaf around the duck to form a neat parcel. Secure with toothpicks if needed.
  4. Steam the wrapped duck parcels for 2 hours until the meat is tender and cooked through.
  5. Unwrap the banana leaves before serving.
