Ingredients
- 4 duck legs
- 8 shallots, finely chopped
- 6 cloves garlic, minced
- 4 red chilies, sliced
- 2 teaspoons shrimp paste
- 1 teaspoon turmeric powder
- 1 teaspoon galangal, grated
- 1 teaspoon salt
- 4 kaffir lime leaves, thinly sliced
- 4 lemongrass stalks, white part only, thinly sliced
- 8 banana leaves, cut into 20x20 cm squares
Instructions
- In a bowl, mix together the shallots, garlic, red chilies, shrimp paste, turmeric powder, galangal, salt, kaffir lime leaves, and lemongrass to create the spice paste.
- Rub the spice paste all over the duck legs and let them marinate for 1 hour.
- Place a piece of banana leaf on a flat surface and put a marinated duck leg in the center. Wrap the banana leaf around the duck to form a neat parcel. Secure with toothpicks if needed.
- Steam the wrapped duck parcels for 2 hours until the meat is tender and cooked through.
- Unwrap the banana leaves before serving.
