Ingredients
- 2 cups basmati rice
- 3 1/2 cups water
- 1/4 cup ghee
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1/2 cup raisins
- 1/4 cup slivered almonds
- 1 teaspoon salt
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- In a large pot, heat the ghee over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Cook for 1-2 minutes until fragrant.
- Add the drained rice to the pot and stir to coat the rice with the ghee and spices. Cook for 2-3 minutes.
- Pour in the water and add the salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Fluff the rice with a fork and remove the cinnamon stick, cardamom pods, and cloves.
- Stir in the raisins and slivered almonds. Cover the pot and let it sit for 5 minutes to allow the flavors to meld.
- Transfer the fragrant rice pilaf to a serving dish and garnish with additional almonds if desired. Serve hot and enjoy!
