Balinese Lamb Satay (sate Kambing)

Ingredients

  • 1.5 lb lamb, cut into cubes
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/4 cup vegetable oil
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix the soy sauce, brown sugar, garlic, coriander, cumin, turmeric, cayenne pepper, and vegetable oil to make the marinade.
  2. Add the lamb cubes to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked skewers.
  5. Grill the lamb skewers for 3-4 minutes per side, or until they are cooked to your desired doneness.
  6. Serve the Balinese Lamb Satay with peanut sauce and steamed rice.
