Balinese Long Bean Salad (lawar Kacang Panjang)

Ingredients

  • 1 lb long beans, trimmed and cut into 1-inch pieces
  • 1 cup grated coconut, toasted
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp palm sugar
  • 1 tsp tamarind paste
  • 1 lemongrass stalk, thinly sliced
  • 1 kaffir lime leaf, thinly sliced
  • 1/4 cup roasted peanuts, crushed
  • Salt to taste

Instructions

  1. In a large pot of boiling water, blanch the long beans for 2-3 minutes until tender-crisp. Drain and set aside.
  2. In a skillet, toast the grated coconut over medium heat until golden brown and fragrant. Remove from heat and let it cool.
  3. In a mortar and pestle, pound the shallots, garlic, red chilies, shrimp paste, and palm sugar into a smooth paste.
  4. Heat a small skillet over low heat and dry roast the paste for 2-3 minutes until fragrant.
  5. Add the tamarind paste, lemongrass, and kaffir lime leaf to the skillet and cook for another 2 minutes.
  6. Transfer the cooked paste to a large mixing bowl. Add the blanched long beans, toasted coconut, and crushed peanuts. Toss well to combine.
  7. Season with salt to taste and serve the Balinese Long Bean Salad at room temperature.
