Balinese Minced Satay (sate Lilit)

Ingredients

  • 500g minced chicken or pork
  • 100g grated coconut
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp palm sugar
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground white pepper
  • 4 lemongrass stalks, white part only, finely chopped
  • 4 kaffir lime leaves, finely chopped
  • 4 tbsp coconut milk
  • Bamboo skewers, soaked in water

Instructions

  1. In a large bowl, mix together the minced meat, grated coconut, shallots, garlic, red chilies, shrimp paste, palm sugar, salt, ground coriander, ground white pepper, lemongrass, kaffir lime leaves, and coconut milk.
  2. Take a portion of the mixture and wrap it around a bamboo skewer, pressing it to form a cylindrical shape.
  3. Heat a non-stick pan over medium heat and cook the skewers for 3-4 minutes on each side until they are cooked through and golden brown.
  4. Serve the Balinese Minced Satay hot with steamed rice and sambal matah.
