Balinese Minced Seafood Skewers (sate Lilit)

Ingredients

  • 500g mixed minced seafood (such as fish, shrimp, and squid)
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp palm sugar
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 2 lemongrass stalks, white part only, finely chopped
  • 2 kaffir lime leaves, finely chopped
  • 2 tbsp coconut milk
  • 1 egg, beaten
  • Bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a large bowl, combine the minced seafood, shallots, garlic, red chilies, shrimp paste, palm sugar, salt, ground coriander, ground turmeric, lemongrass, kaffir lime leaves, coconut milk, and beaten egg. Mix well to combine.
  2. Take a small portion of the mixture and wrap it around a bamboo skewer, pressing it to form a cylindrical shape. Repeat with the remaining mixture and skewers.
  3. Heat a non-stick pan over medium heat. Cook the skewers for 3-4 minutes on each side, or until golden brown and cooked through.
  4. Alternatively, grill the skewers on a preheated grill for 3-4 minutes on each side.
  5. Once cooked, serve the Balinese Minced Seafood Skewers hot with steamed rice and a side of sambal matah or peanut sauce.
