Ingredients
- 1 cup green beans, cut into 1-inch pieces
- 1 cup bean sprouts
- 1 cup grated coconut
- 2 kaffir lime leaves, finely shredded
- 1 lemongrass stalk, white part only, thinly sliced
- 2 red chilies, thinly sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoons lime juice
Instructions
- Blanch the green beans and bean sprouts in boiling water for 1-2 minutes, then drain and rinse with cold water.
- In a large bowl, combine the blanched vegetables, grated coconut, kaffir lime leaves, lemongrass, and red chilies.
- In a small bowl, mix the salt, sugar, and lime juice to make the dressing.
- Pour the dressing over the vegetable mixture and toss to combine.
- Adjust seasoning to taste, then serve the salad at room temperature.
