Ingredients

  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup bean sprouts
  • 1 cup grated coconut
  • 2 kaffir lime leaves, finely shredded
  • 1 lemongrass stalk, white part only, thinly sliced
  • 2 red chilies, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons lime juice

Instructions

  1. Blanch the green beans and bean sprouts in boiling water for 1-2 minutes, then drain and rinse with cold water.
  2. In a large bowl, combine the blanched vegetables, grated coconut, kaffir lime leaves, lemongrass, and red chilies.
  3. In a small bowl, mix the salt, sugar, and lime juice to make the dressing.
  4. Pour the dressing over the vegetable mixture and toss to combine.
  5. Adjust seasoning to taste, then serve the salad at room temperature.
