Ingredients

  • 2 cups finely chopped green beans
  • 2 cups shredded coconut
  • 1 cup chopped snake beans
  • 1 cup grated coconut, roasted
  • 1 cup chopped long beans
  • 1 cup grated coconut, steamed
  • 1 cup chopped cabbage
  • 1 cup chopped carrots
  • 1 cup chopped green papaya
  • 1 cup chopped shallots
  • 1 cup chopped lemongrass
  • 1 cup chopped kaffir lime leaves
  • 1 cup chopped turmeric leaves
  • 1 cup chopped galangal
  • 1 cup chopped ginger
  • 1 cup chopped red chili peppers
  • 1 cup chopped garlic
  • 1 cup chopped shallots
  • 1 cup lime juice
  • 1 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large mixing bowl, combine all the chopped vegetables and herbs.
  2. Heat the vegetable oil in a pan over medium heat. Add the garlic, shallots, red chili peppers, and stir-fry until fragrant.
  3. Add the shredded coconut and continue to stir-fry until the coconut turns golden brown.
  4. Add the vegetable mixture to the pan and stir-fry for a few minutes until the vegetables are cooked but still crisp.
  5. Remove from heat and let it cool slightly.
  6. Add lime juice and salt to taste, then mix well.
  7. Serve the Balinese Mixed Vegetable Salad (Lawar Bali) at room temperature as a side dish or as a main course with steamed rice.
