Ingredients
- 2 cups finely chopped green beans
- 2 cups shredded coconut
- 1 cup chopped snake beans
- 1 cup grated coconut, roasted
- 1 cup chopped long beans
- 1 cup grated coconut, steamed
- 1 cup chopped cabbage
- 1 cup chopped carrots
- 1 cup chopped green papaya
- 1 cup chopped shallots
- 1 cup chopped lemongrass
- 1 cup chopped kaffir lime leaves
- 1 cup chopped turmeric leaves
- 1 cup chopped galangal
- 1 cup chopped ginger
- 1 cup chopped red chili peppers
- 1 cup chopped garlic
- 1 cup chopped shallots
- 1 cup lime juice
- 1 cup vegetable oil
- Salt to taste
Instructions
- In a large mixing bowl, combine all the chopped vegetables and herbs.
- Heat the vegetable oil in a pan over medium heat. Add the garlic, shallots, red chili peppers, and stir-fry until fragrant.
- Add the shredded coconut and continue to stir-fry until the coconut turns golden brown.
- Add the vegetable mixture to the pan and stir-fry for a few minutes until the vegetables are cooked but still crisp.
- Remove from heat and let it cool slightly.
- Add lime juice and salt to taste, then mix well.
- Serve the Balinese Mixed Vegetable Salad (Lawar Bali) at room temperature as a side dish or as a main course with steamed rice.
