Ingredients

  • 400g mushrooms, sliced
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp salt
  • 1 tsp sugar
  • 4 kaffir lime leaves, thinly sliced
  • 4 lemongrass stalks, white part only, thinly sliced
  • 4 tbsp coconut milk
  • 4 banana leaves, cut into 8 rectangles

Instructions

  1. In a bowl, mix the mushrooms, shallots, garlic, chilies, shrimp paste, salt, sugar, kaffir lime leaves, lemongrass, and coconut milk until well combined.
  2. Place 2 banana leaf rectangles on top of each other. Spoon a portion of the mushroom mixture onto the center of the banana leaves.
  3. Fold the banana leaves to form a neat parcel, then secure with toothpicks.
  4. Steam the parcels for 25 minutes.
  5. Once cooked, carefully open the banana leaf parcels and serve the Balinese Mushrooms hot.
