Ingredients

  • 6 shallots, thinly sliced
  • 4-6 bird's eye chilies, thinly sliced
  • 2 lemongrass stalks, white part only, thinly sliced
  • 3 kaffir lime leaves, finely julienned
  • 1 tomato, diced
  • 1 tsp shrimp paste (optional)
  • 1 tsp palm sugar or brown sugar
  • 1/2 tsp salt
  • 2 tbsp lime juice

Instructions

  1. In a bowl, combine the shallots, chilies, lemongrass, kaffir lime leaves, and tomato.
  2. Add the shrimp paste (if using), palm sugar, salt, and lime juice. Mix well.
  3. Let the sambal sit for 5 minutes to allow the flavors to meld together.
  4. Adjust the seasoning to your taste, adding more salt or lime juice if needed.
