Ingredients
- 6 shallots, thinly sliced
- 4-6 bird's eye chilies, thinly sliced
- 2 lemongrass stalks, white part only, thinly sliced
- 3 kaffir lime leaves, finely julienned
- 1 tomato, diced
- 1 tsp shrimp paste (optional)
- 1 tsp palm sugar or brown sugar
- 1/2 tsp salt
- 2 tbsp lime juice
Instructions
- In a bowl, combine the shallots, chilies, lemongrass, kaffir lime leaves, and tomato.
- Add the shrimp paste (if using), palm sugar, salt, and lime juice. Mix well.
- Let the sambal sit for 5 minutes to allow the flavors to meld together.
- Adjust the seasoning to your taste, adding more salt or lime juice if needed.
