Ingredients
- 6 shallots, thinly sliced
- 4-6 Thai chilies, thinly sliced
- 2 lemongrass stalks, thinly sliced
- 4 kaffir lime leaves, finely chopped
- 1 tomato, diced
- 1 cucumber, thinly sliced
- 1 small carrot, julienned
- 1/4 cup shredded coconut, toasted
- 1/4 cup coconut oil
- 1 teaspoon salt
- 1 teaspoon sugar
Instructions
- In a large bowl, combine the shallots, chilies, lemongrass, kaffir lime leaves, tomato, cucumber, carrot, and toasted coconut.
- In a small saucepan, heat the coconut oil until just warm, then pour it over the vegetable mixture.
- Add salt and sugar, then toss everything together until well combined.
