Ingredients

  • 6 shallots, thinly sliced
  • 4-6 Thai chilies, thinly sliced
  • 2 lemongrass stalks, thinly sliced
  • 4 kaffir lime leaves, finely chopped
  • 1 tomato, diced
  • 1 cucumber, thinly sliced
  • 1 small carrot, julienned
  • 1/4 cup shredded coconut, toasted
  • 1/4 cup coconut oil
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. In a large bowl, combine the shallots, chilies, lemongrass, kaffir lime leaves, tomato, cucumber, carrot, and toasted coconut.
  2. In a small saucepan, heat the coconut oil until just warm, then pour it over the vegetable mixture.
  3. Add salt and sugar, then toss everything together until well combined.
  4. Let the sambal sit for 10 minutes to allow the flavors to meld before serving.
