Ingredients
- 1 cup cooked red beans
- 1 cup grated coconut
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tsp shrimp paste
- 1 tsp palm sugar
- 1 tsp tamarind paste
- 1 cup chopped green beans
- 1 cup bean sprouts
- 1 cup shredded cabbage
- 1 lemongrass stalk, thinly sliced
- 1 kaffir lime leaf, finely sliced
- Salt to taste
Instructions
- In a pan, dry roast the grated coconut until golden brown. Set aside.
- In a mortar and pestle, grind the shallots, garlic, red chili, shrimp paste, and palm sugar into a smooth paste.
- Heat a small amount of oil in a pan and sauté the spice paste until fragrant.
- Add the cooked red beans, tamarind paste, lemongrass, and kaffir lime leaf. Cook for a few minutes.
- Turn off the heat and add the green beans, bean sprouts, and shredded cabbage. Mix well.
- Finally, add the roasted coconut and mix until everything is well combined. Season with salt to taste.
- Serve the Balinese Red Bean Salad (Lawar Kacang Merah) at room temperature as a side dish or a light meal.
