Ingredients

  • 1 cup jasmine rice
  • 4 cups water
  • 1 pandan leaf, tied in a knot
  • 1/2 cup coconut milk
  • 1/4 cup palm sugar, grated
  • 1/4 tsp salt

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, combine the rinsed rice, water, and pandan leaf. Bring to a boil over medium heat.
  3. Reduce the heat to low and simmer, stirring occasionally, for about 45 minutes or until the rice is very soft and the porridge has thickened.
  4. Stir in the coconut milk, palm sugar, and salt. Cook for an additional 10 minutes, stirring frequently.
  5. Remove the pandan leaf and discard.
  6. Divide the porridge into serving bowls and serve hot.
