Balinese Rice Porridge (bubur Bali)
Balinese Rice Porridge, also known as Bubur Bali, is a traditional dish from the beautiful island of Bali, Indonesia. This creamy and comforting porridge is often enjoyed as a breakfast or snack, and it's a popular dish during special occasions and ceremonies.
Ingredients
- 1 cup jasmine rice
- 4 cups water
- 1 pandan leaf, tied in a knot
- 1/2 cup coconut milk
- 1/4 cup palm sugar, grated
- 1/4 tsp salt
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice, water, and pandan leaf. Bring to a boil over medium heat.
- Reduce the heat to low and simmer, stirring occasionally, for about 45 minutes or until the rice is very soft and the porridge has thickened.
- Stir in the coconut milk, palm sugar, and salt. Cook for an additional 10 minutes, stirring frequently.
- Remove the pandan leaf and discard.
- Divide the porridge into serving bowls and serve hot.
