Balinese Roast Duck (bebek Betutu)
Bebek Betutu is a traditional Balinese dish of roast duck that is rich in flavor and spices. This dish is a popular choice for special occasions and ceremonies in Bali, and it is known for its aromatic and tender meat.
Ingredients
- 1 whole duck, cleaned and dried
- 10 shallots
- 8 cloves garlic
- 5 red chilies
- 3 candlenuts
- 2 stalks lemongrass
- 5 kaffir lime leaves
- 1 tsp shrimp paste
- 1 tsp turmeric powder
- 1 tsp galangal powder
- 1 tsp coriander powder
- 1 tsp black peppercorns
- 1 tsp salt
- 2 tbsp tamarind juice
- Banana leaves
Instructions
- Grind the shallots, garlic, red chilies, candlenuts, lemongrass, kaffir lime leaves, shrimp paste, turmeric powder, galangal powder, coriander powder, and black peppercorns into a smooth spice paste.
- Mix the spice paste with salt and tamarind juice to create a marinade.
- Marinate the duck with the spice mixture, inside and out, and let it sit for at least 2 hours, or preferably overnight in the refrigerator.
- Wrap the marinated duck in banana leaves, then aluminum foil, and roast in a preheated oven at 180°C (350°F) for 4 hours.
- Unwrap the duck and roast for an additional 30 minutes to crisp up the skin.
- Let the duck rest for 10 minutes before carving and serving.
