Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 4 kaffir lime leaves, thinly sliced
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chili peppers, thinly sliced
  • 1 tsp shrimp paste
  • 1 tsp tamarind paste
  • 1 tsp palm sugar
  • 1 tsp salt
  • 2 tbsp cooking oil

Instructions

  1. Boil the chicken breasts in a pot of water until fully cooked, then shred the chicken using two forks.
  2. In a pan, heat the cooking oil and sauté the shallots, garlic, and chili peppers until fragrant.
  3. Add the shredded chicken, kaffir lime leaves, shrimp paste, tamarind paste, palm sugar, and salt to the pan. Mix well and cook for 5-7 minutes.
  4. Remove from heat and let the flavors meld for a few minutes before serving.
