Balinese Soft Satay (sate Lembat)
Balinese Soft Satay, or Sate Lembat, is a traditional dish from the beautiful island of Bali, Indonesia. This dish features tender and flavorful skewered meat, marinated in a blend of aromatic spices and grilled to perfection.
Ingredients
- 1 lb (450g) chicken breast, cut into cubes
- 1 cup coconut milk
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric powder
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
- Bamboo skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, garlic, shallots, coriander, cumin, turmeric, brown sugar, soy sauce, vegetable oil, salt, and pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked bamboo skewers.
- Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice charred exterior.
- Serve the Balinese Soft Satay hot with steamed rice, sambal, and fresh cucumber slices.
