Balinese Soft Satay (sate Lembat)

Ingredients

  • 1 lb (450g) chicken breast, cut into cubes
  • 1 cup coconut milk
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric powder
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • Bamboo skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, garlic, shallots, coriander, cumin, turmeric, brown sugar, soy sauce, vegetable oil, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked bamboo skewers.
  4. Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice charred exterior.
  5. Serve the Balinese Soft Satay hot with steamed rice, sambal, and fresh cucumber slices.
