Ingredients
- 4 boneless, skinless chicken breasts
- 8 shallots, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 tbsp shrimp paste
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground ginger
- 4 kaffir lime leaves, thinly sliced
- 4 lemongrass stalks, white part only, finely chopped
- Salt to taste
- 8 banana leaves, cut into 8-inch squares
Instructions
- In a bowl, mix together the shallots, garlic, red chilies, shrimp paste, turmeric, coriander, ginger, kaffir lime leaves, lemongrass, and salt to create the spice paste.
- Cut each chicken breast into two pieces and coat them with the spice paste. Marinate for at least 1 hour.
- Place each piece of marinated chicken on a banana leaf square and wrap it securely.
- Steam the wrapped chicken pieces for 1 hour.
- Unwrap the banana leaves and serve the Balinese Spicy Chicken hot with steamed rice.
