Balinese Spicy Chicken Rice Wrap (nasi Jinggo Ayam)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cooked white rice
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp palm sugar
  • 1 tsp tamarind paste
  • 1 tsp salt
  • 1/2 cup coconut milk
  • 4 banana leaves, cut into 8x8 inch squares

Instructions

  1. In a bowl, mix together the shallots, garlic, red chilies, shrimp paste, palm sugar, tamarind paste, salt, and coconut milk to make the marinade.
  2. Cut the chicken breasts into small pieces and marinate them in the spice mixture for 15 minutes.
  3. Divide the cooked rice into 4 portions and place each portion in the center of a banana leaf square.
  4. Place the marinated chicken on top of the rice and wrap the banana leaves to form a tight parcel.
  5. Steam the wrapped parcels for 20-25 minutes until the chicken is cooked through.
  6. Unwrap the parcels and serve the Balinese Spicy Chicken Rice Wraps hot.
