Balinese Spicy Chicken Rice Wrap (nasi Jinggo Ayam)
This Balinese Spicy Chicken Rice Wrap, also known as Nasi Jinggo Ayam, is a popular street food in Bali. It's a flavorful and spicy dish that is perfect for a quick and satisfying meal on the go.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups cooked white rice
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 tsp shrimp paste
- 1 tsp palm sugar
- 1 tsp tamarind paste
- 1 tsp salt
- 1/2 cup coconut milk
- 4 banana leaves, cut into 8x8 inch squares
Instructions
- In a bowl, mix together the shallots, garlic, red chilies, shrimp paste, palm sugar, tamarind paste, salt, and coconut milk to make the marinade.
- Cut the chicken breasts into small pieces and marinate them in the spice mixture for 15 minutes.
- Divide the cooked rice into 4 portions and place each portion in the center of a banana leaf square.
- Place the marinated chicken on top of the rice and wrap the banana leaves to form a tight parcel.
- Steam the wrapped parcels for 20-25 minutes until the chicken is cooked through.
- Unwrap the parcels and serve the Balinese Spicy Chicken Rice Wraps hot.
