Balinese Spicy Rice Wrap (nasi Jinggo)

Ingredients

  • 4 cups cooked white rice
  • 8 small banana leaves, cut into 8x8 inch squares
  • 1 cup shredded chicken
  • 1 cup fried tempeh
  • 1 cup sambal matah (Balinese chili relish)
  • 4 hard-boiled eggs, halved
  • 4 tablespoons fried shallots
  • 4 tablespoons crispy fried anchovies

Instructions

  1. Place a portion of rice in the center of each banana leaf square.
  2. Top the rice with shredded chicken, fried tempeh, sambal matah, and a halved hard-boiled egg.
  3. Sprinkle with fried shallots and crispy fried anchovies.
  4. Wrap the banana leaves to form a neat package.
  5. Steam the wrapped rice for 10 minutes.
  6. Unwrap and serve hot.
