Balinese Spicy Shrimp Sambal (sambal Udang)

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 5 red chili peppers, finely chopped
  • 2 tomatoes, diced
  • 2 tbsp tamarind paste
  • 1 tsp palm sugar
  • 1 tsp salt
  • 2 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a pan over medium heat.
  2. Add the shallots, garlic, and red chili peppers. Sauté until fragrant.
  3. Add the shrimp and cook until they turn pink.
  4. Add the tomatoes, tamarind paste, palm sugar, and salt. Stir well to combine.
  5. Cook for another 2-3 minutes until the sauce thickens.
  6. Remove from heat and serve hot.
