Ingredients
- 1 cup shredded cabbage
- 1 cup chopped green beans
- 1 cup sliced carrots
- 1 cup chopped spinach
- 1 cup grated coconut
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 tsp shrimp paste (or miso paste for vegan option)
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp sugar
- 4 kaffir lime leaves, thinly sliced
- 4 banana leaves, cut into 8x8 inch squares
Instructions
- In a large bowl, mix together the shredded cabbage, chopped green beans, sliced carrots, chopped spinach, grated coconut, shallots, garlic, red chilies, shrimp paste, turmeric powder, salt, sugar, and kaffir lime leaves.
- Place a portion of the vegetable mixture onto each banana leaf square and wrap into a neat parcel.
- Steam the parcels over medium heat for 25 minutes, or until the vegetables are tender.
- Unwrap the banana leaves before serving.
