Balinese Yellow Rice (Nasi Kuning Bali) is a fragrant and flavorful dish that is a staple in Balinese cuisine. It is often served during special occasions and ceremonies, symbolizing prosperity and good fortune.
Ingredients
- 2 cups jasmine rice
- 2 cups coconut milk
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1 tsp turmeric powder
- 1 tsp salt
- 4 shallots, thinly sliced
- 2 cloves garlic, minced
- 2 Tbsp vegetable oil
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a large pot, combine the rice, coconut milk, lemongrass, kaffir lime leaves, turmeric powder, and salt. Bring to a boil over medium heat.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat the vegetable oil in a pan over medium heat. Sauté the shallots and garlic until golden brown and crispy. Set aside.
- Once the rice is done, fluff it with a fork and remove the lemongrass and kaffir lime leaves.
- Transfer the rice to a serving platter and garnish with the crispy shallots and garlic.
