Balinese Yellow Rice (nasi Kuning Bali)

Ingredients

  • 2 cups jasmine rice
  • 2 cups coconut milk
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 4 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 2 Tbsp vegetable oil

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a large pot, combine the rice, coconut milk, lemongrass, kaffir lime leaves, turmeric powder, and salt. Bring to a boil over medium heat.
  3. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. While the rice is cooking, heat the vegetable oil in a pan over medium heat. Sauté the shallots and garlic until golden brown and crispy. Set aside.
  5. Once the rice is done, fluff it with a fork and remove the lemongrass and kaffir lime leaves.
  6. Transfer the rice to a serving platter and garnish with the crispy shallots and garlic.
