Balkan Chicken Skewers (Balkanski Pileći Ražnjići)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup (60ml) olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons (30ml) red wine vinegar
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks

Instructions

  1. In a bowl, combine the olive oil, minced garlic, red wine vinegar, paprika, oregano, salt, and black pepper. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  2. Preheat the stovetop grill pan over medium-high heat. Thread the marinated chicken cubes, onion chunks, and bell pepper chunks onto skewers, alternating the ingredients.
  3. Place the skewers on the grill pan and cook for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and the vegetables are tender and slightly charred.
  4. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
