Balochi Aloo Curry (balochi Style Potato Curry)

Ingredients

  • 4 large potatoes, peeled and cubed
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 2 green chilies, sliced
  • 1/2 cup yogurt
  • 1/4 cup oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add onions and green chilies. Sauté until onions are golden brown.
  2. Add tomatoes and cook until they turn soft and oil separates.
  3. Stir in turmeric, red chili powder, coriander powder, and salt. Cook for a few minutes.
  4. Add yogurt and cook until the oil separates.
  5. Add potatoes and mix well. Add water as needed to cover the potatoes. Cover and cook until the potatoes are tender.
  6. Sprinkle garam masala and garnish with fresh cilantro.
