Ingredients

  • 6 eggs
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup yogurt
  • 2 green chilies, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Boil the eggs, peel and set aside.
  2. Heat oil in a pan, add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste, green chilies, and sauté for 2 minutes.
  5. Now add tomato puree, turmeric powder, coriander powder, red chili powder, and cook until the oil separates.
  6. Whisk the yogurt and add it to the masala, stirring continuously.
  7. Add garam masala and salt, then gently place the boiled eggs in the curry.
  8. Cover and cook for 5-7 minutes on low heat.
  9. Garnish with fresh coriander leaves and serve hot with rice or naan.
