Ingredients

  • 4 small eggplants, cut into cubes

  • 3 tomatoes, pureed
  • 2 green chilies, slit
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add the pureed tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until the oil separates from the masala.
  3. Add the cubed eggplants and green chilies. Mix well to coat the eggplants with the masala.
  4. Cover and cook on low heat until the eggplants are tender, stirring occasionally.
