Ingredients

  • 500g lamb, cut into pieces
  • 2 cups basmati rice, soaked
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup fresh coriander leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup ghee
  • 1/4 cup oil
  • 2 tbsp ginger-garlic paste
  • Whole spices: bay leaves, cinnamon, cardamom, cloves
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp biryani masala
  • Salt to taste
  • Saffron strands soaked in milk

Instructions

  1. Marinate the lamb pieces with yogurt, ginger-garlic paste, biryani masala, and salt. Let it sit for 1 hour.
  2. Heat ghee and oil in a large pot. Add the sliced onions and cook until golden brown.
  3. Add the marinated lamb and cook until the meat is tender.
  4. Layer the cooked lamb with soaked basmati rice, tomatoes, green chilies, mint leaves, and coriander leaves in a pot.
  5. Sprinkle saffron milk on top and cover the pot with a tight lid. Cook on low heat for 20-25 minutes.
  6. Once done, gently mix the layers and serve hot.
