Balochi Gosht Dum Biryani (traditional Balochi Lamb Dum Biryani)
Balochi Gosht Dum Biryani is a traditional Balochi lamb biryani that is cooked with aromatic spices and flavorful basmati rice. This dish is a perfect blend of tender lamb, fragrant rice, and rich spices, creating a mouthwatering experience for biryani lovers.
Ingredients
- 500g lamb, cut into pieces
- 2 cups basmati rice, soaked
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup fresh coriander leaves
- 1/4 cup fresh mint leaves
- 1/4 cup ghee
- 1/4 cup oil
- 2 tbsp ginger-garlic paste
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp biryani masala
- Salt to taste
- Saffron strands soaked in milk
Instructions
- Marinate the lamb pieces with yogurt, ginger-garlic paste, biryani masala, and salt. Let it sit for 1 hour.
- Heat ghee and oil in a large pot. Add the sliced onions and cook until golden brown.
- Add the marinated lamb and cook until the meat is tender.
- Layer the cooked lamb with soaked basmati rice, tomatoes, green chilies, mint leaves, and coriander leaves in a pot.
- Sprinkle saffron milk on top and cover the pot with a tight lid. Cook on low heat for 20-25 minutes.
- Once done, gently mix the layers and serve hot.
