Ingredients

  • 500g mutton, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1/2 cup plain yogurt
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 4 cups water
  • Salt to taste
  • 3 tbsp cooking oil

Instructions

  1. Heat oil in a large pot and sauté the sliced onions until golden brown.
  2. Add the mutton pieces and cook until they are browned on all sides.
  3. Stir in the garlic, ginger, and spices, and cook for a few minutes until fragrant.
  4. Whisk the yogurt and add it to the pot, stirring well to coat the mutton.
  5. Drain the soaked rice and add it to the pot, then pour in the water.
  6. Season with salt, cover the pot, and let the pulao simmer for 30-40 minutes until the mutton and rice are tender.
  7. Once done, fluff the pulao with a fork and serve hot.
