Ingredients
- 6 medium beets, peeled and grated
- 4 cups vegetable broth
- 1 onion, finely chopped
- 3 carrots, grated
- 3 potatoes, peeled and diced
- 1 cup sour cream
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large pot, combine the grated beets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the chopped onion, grated carrots, and diced potatoes to the pot. Simmer for an additional 20 minutes, or until the vegetables are tender.
- Stir in the sour cream and apple cider vinegar. Season with salt and pepper to taste.
- Simmer for 5-10 minutes to allow the flavors to meld together.
- Remove from heat and let the soup cool slightly before serving.
