Baltic Chicken Stew (Baltijos vištienos troškinys)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 3 potatoes, peeled and diced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chicken thighs, skin side down, and cook until golden brown. Remove the chicken and set aside.
  3. In the same pot, add the chopped onion, carrots, parsnips, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Add the minced garlic, bay leaves, and dried thyme. Cook for another 2 minutes.
  5. Return the chicken thighs to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Discard the bay leaves and adjust the seasoning with salt and pepper. Serve the Baltic Chicken Stew hot and enjoy!
