Ingredients

  • 500g mixed fish fillets (such as cod, salmon, and haddock), cut into chunks
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 can (400g) chopped tomatoes
  • 4 cups fish or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add the garlic and cook for another 1-2 minutes until fragrant.
  3. Pour in the chopped tomatoes and fish or vegetable broth. Add the bay leaf, dried thyme, and season with salt and pepper. Bring to a simmer.
  4. Add the potatoes and let the stew simmer for 15 minutes.
  5. Gently add the fish chunks to the pot and simmer for an additional 10-15 minutes, or until the fish is cooked through.
  6. Discard the bay leaf and adjust the seasoning if needed. Serve the Baltic Fisherman's Stew hot, garnished with fresh herbs if desired.
