Baltic Herring Pie (Baltijos silkės pyragas)

Ingredients

  • 500g Baltic herring fillets
  • 2 onions, thinly sliced
  • 4 hard-boiled eggs, sliced
  • 300g potatoes, boiled and mashed
  • 200g sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 500g pie crust dough

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Layer half of the sliced onions in the bottom of a greased pie dish.
  3. Arrange half of the herring fillets on top of the onions, then layer half of the sliced eggs on top of the herring.
  4. Repeat the layers with the remaining onions, herring, and eggs.
  5. In a bowl, mix together the mashed potatoes, sour cream, Dijon mustard, salt, and pepper. Spread this mixture over the layers in the pie dish.
  6. Roll out the pie crust dough and place it over the pie dish, sealing the edges. Cut a few slits in the top crust to allow steam to escape.
  7. Bake the pie in the preheated oven for 45 minutes, or until the crust is golden brown.
  8. Let the pie cool for a few minutes before slicing and serving.
