Ingredients

  • 4 whole herring fillets
  • 1 cup white vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 onion, thinly sliced
  • 5 whole allspice berries
  • 5 whole black peppercorns
  • 2 bay leaves

Instructions

  1. In a small saucepan, combine the white vinegar, water, sugar, salt, allspice berries, black peppercorns, and bay leaves. Bring to a simmer over medium heat, stirring until the sugar and salt are dissolved. Remove from heat and let the brine cool to room temperature.
  2. Rinse the herring fillets under cold water and pat dry with paper towels. Cut each fillet into bite-sized pieces and place them in a glass or plastic container.
  3. Add the sliced onion on top of the herring pieces in the container.
  4. Pour the cooled brine over the herring and onions, ensuring that the fish is completely submerged. Cover the container and refrigerate for at least 24 hours before serving.
  5. Once marinated, the herring can be served with dark bread, boiled potatoes, and a dollop of sour cream.
