Baltic Pickled Herring (Baltijos marinuotos silkės)
Baltijos marinuotos silkės, or Baltic Pickled Herring, is a traditional dish in Baltic cuisines, particularly popular in Lithuania. This recipe offers a delightful combination of flavors, making it a perfect appetizer or addition to a festive spread.
Ingredients
- 4 whole herring fillets
- 1 cup white vinegar
- 1/2 cup water
- 1/4 cup sugar
- 1 teaspoon salt
- 1 onion, thinly sliced
- 5 whole allspice berries
- 5 whole black peppercorns
- 2 bay leaves
Instructions
- In a small saucepan, combine the white vinegar, water, sugar, salt, allspice berries, black peppercorns, and bay leaves. Bring to a simmer over medium heat, stirring until the sugar and salt are dissolved. Remove from heat and let the brine cool to room temperature.
- Rinse the herring fillets under cold water and pat dry with paper towels. Cut each fillet into bite-sized pieces and place them in a glass or plastic container.
- Add the sliced onion on top of the herring pieces in the container.
- Pour the cooled brine over the herring and onions, ensuring that the fish is completely submerged. Cover the container and refrigerate for at least 24 hours before serving.
- Once marinated, the herring can be served with dark bread, boiled potatoes, and a dollop of sour cream.
