Baltic Sea Salmon Soup (Baltijas jūras lasi zupa)

Ingredients

  • 500g fresh salmon fillet, cut into chunks
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 celery stalk, chopped
  • 1 liter fish or vegetable broth
  • 200ml heavy cream
  • 2 bay leaves
  • Salt and pepper to taste
  • Chopped fresh dill for garnish

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the potatoes and fish or vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Add the salmon chunks and bay leaves. Simmer for an additional 10 minutes.
  4. Stir in the heavy cream and season with salt and pepper. Simmer for 5 more minutes.
  5. Remove the bay leaves and serve the soup hot, garnished with chopped fresh dill.
