Ingredients
- 1 lb smoked salmon, flaked
- 3 large potatoes, diced

- 2 tbsp all-purpose flour
- 2 tbsp butter
- 1 bay leaf
- 1/2 tsp dried thyme

- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

- Slowly pour in the fish or vegetable broth while stirring constantly to avoid lumps. Add the diced potatoes, bay leaf, and dried thyme. Bring the chowder to a simmer and cook for 15-20 minutes, or until the potatoes are tender.
- Stir in the flaked smoked salmon and heavy cream. Simmer for an additional 5 minutes. Season with salt and pepper to taste.
- Remove the bay leaf and discard. Serve the chowder hot, garnished with fresh dill.
