Ingredients

  • 1 cup honey
  • 1 cup sugar

  • 3 eggs

  • 1/4 teaspoon nutmeg
  • 3 cups all-purpose flour
  • 2 cups heavy cream

Instructions

  1. In a saucepan, combine the honey, sugar, and butter. Heat over medium heat until the sugar is dissolved and the mixture is smooth. Remove from heat and let it cool.
  2. In a large bowl, beat the eggs. Gradually add the honey mixture while continuing to beat.
  3. Add the baking soda, cinnamon, cloves, nutmeg, and flour to the egg mixture. Mix until a smooth dough forms.
  4. Divide the dough into 8 equal parts and roll each part into a thin circle. Bake each layer on a greased baking sheet at 350°F for 5-7 minutes or until lightly browned.
  5. Whip the heavy cream until stiff peaks form.
  6. Spread a layer of whipped cream on each baked honey cake layer and stack them on top of each other.
  7. Spread the remaining whipped cream on the top and sides of the cake. Refrigerate for at least 4 hours before serving.
